Harvest
Ciro's grapes are harvested when the sugar levels and total acidity have reached their optimum state. The 'must-measure' (mostimetro) is used to analyse the sugar level of the grapes in the vineyard. If the level remains constant for two or three days it indicates that the peak has been reached and the grapes are ready to be harvested. The grape maturation can also be identified by observing the colouring of the skin: White grapes become transparent and red grapes become red or reddy brown, and the taste becomes uniformly sweet

In Ciro' the harvest usually takes place between late September and the first half of October. The grapes are carefully selected and picked entirely by hand, whole families participate and the event is enjoyed by all.
